Quorn Curry

Quorn & Mushroom Curry

Ever since I've become a vegetarian ( Beginning of this year it was my New years resolution) I have tried many Quorn products and this is my favourite ( chicken style pieces) I use it all the time.

This is one of mine and my other half's favourite curry eaten with rice :) 
Ingredients:
Quorn chicken style pieces ( as much as you need )
Mushrooms.( as much as you need )
2 Table spoons of oil
1 diced onion
1 diced pepper or mixed peppers
1 teaspoon of 3G paste ( ginger, garlic and green chilli)
1 tin of tomatoes or jar of pasata.
 cinnamon stick
Turmeric
salt
pinch of all spice (optional)
mustard seeds
3 curry leaves(optional)
sugar
Cumin and coriander powder.

Preparation Method:
Add oil to a large pan.
When oil is hot enough add add all the spices and cook for 2-3 minutes.
Add in onions and cook until totally caramelized ( nice and crispy) 
Then add in the 3G paste and stir in for a few seconds.
Add in the peppers and mix well.
Then pour in the tomatoes and mix through. 
Add in the salt ( to taste) pinch of turmeric and pinch of sugar and bring it to a boil.
Let simmer until all the flavours are incorporated into the tomato base.
Add in Quorn pieces and sliced mushrooms and simmer for 10 mins.
Enjoy with plain rice or any type of flat breads that you like :)
