This pie is a great winter warmer and so comforting :) Best of all it's very easy to make.
So give it a try.
1 packet of Vegemince
1 large onion
Diced sweet peppers( yellow,green and red)
1 vegetarian stock cube( to crumble)
1-2 fresh carrots ( you can use canned)
1 teaspoon chilli,garlic and ginger paste (optional)
1 pint of vegetarian gravy
Pinch of curry powder(optional)
5-6 potatoes for the topping
Chop potato into cubes and boil until tender.
Put oil in a large pan and heat
Add diced onion and peppers and saute til tender
Add a teaspoon of ginger, garlic and chilli paste and give it a quick stir to get rawness out.
Now add the bag of vegemince and stir all the ingredients well.
Crumble the Vegetarian stock cube into the mince and stir through.
Add in 1 pint of vegetarian gravy and pinch of curry powder, stir well and let it simmer for 5 minutes.
Taste for seasoning.
I didn't add any salt in this recipe as the paste, gravy and stock cube have salt in it.
Pour mince into an oven dish and set aside to cool slightly.
In the mean time preheat your oven to 180
Prepare mash for topping
once The mince is cooled down put the mash on top and spread it all over till mince is covered.
Pop it in the oven for around 10 minutes until top is browned.
I added a tiny bit of cheese on top of the topping for a bit of colour :)
You can add any of your fave veggies to this recipe, I like it simple so I only added carrots, but go ahead and expirement.
